Richard Hodge is a force to be reckoned with. He has culinary school’s classical training behind him and the bold flavours of Asia in front of him.

As he explains, the influences of Asian cuisine has helped him learn to balance flavours. He backs up that claim with this dish which, not only balances the salty, sweet, sour and spicy flavours well, but also brings out the light sweetness of the blackest cream ale.

This delight will be the special at Borealis Grille and Bar in Guelph from June 6-12.
